LSU AgCenter cookbook aptly named
Serving Louisiana
The book contains 240 recipes served in Louisiana – and valuable facts about how the LSU AgCenter serves Louisiana.
Serving Louisiana is the title of a relatively new cookbook published by the LSU AgCenter in Baton Rouge. It’s also an apt description of what the AgCenter has been doing since its inception.
“The cookbook was developed as a fundraising project for the advancement of research and outreach of the LSU AgCenter,” says Elma Sue McCallum of the LSU AgCenter. “Our mission – like that of other land grant institutions around the country – is to develop innovative research and educational programs in a variety of areas that impact people’s lives, such as agriculture, natural resources, environment, nutrition, family life, youth development, to name a few.”
But, back to the cookbook.
It’s a 228-page hardcover, illustrated with a number of beautiful color photographs of some of the dishes in the book. The recipes are for Cajun, Creole and Southern foods, with a few rather exotic dishes thrown in for good measure.
The recipes were provided by a variety of groups, ranging from staff and retirees of the AgCenter to celebrity chefs to BMOCs at LSU. (BMOCs is an old-fashioned acronym for Big Men On Campus, sometimes referred to as VIPs, Very Important Persons.)
The chefs include John Folse, Paul Prudhomme and Joe Major. The BMOCs include LSU football coach Nick Saban, LSU basketball coach John Brady, and LSU System president Bill Jenkins.
Among the recipes are the familiar-sounding Cochon de Lait, Blackened Fish Fillets, Swiss Steak Royale, Catfish ŕ la Creole and Baked Oysters. Also included are the less-familiar “Armadillo Eggs” (what?), Cajun Eggs, and “Bill’s Bobotie” (bravely submitted by LSU System president Bill Jenkins).
The book is spiced up with a number of cooking tips, nutritional guidelines, definitions, suggested menus, and a smattering of facts about how the LSU AgCenter serves the people of Louisiana.
